Ingredients

  • 100g white fish
  • 2 cups diced tomatoes
  • 2 Tbsp lemon juice
  • 1/2tsp curry seasoning
  • 1 Tbsp of basil
  • 1 Tbsp of raw apple cider vinegar

Instructions

  1. Preheat grill, place fish on grilling rack.
  2. Squeeze ½ lemon over fish, sprinkle with curry seasoning.
  3. Grill until flaky, about 5 -10 minutes, turning once.
  4. Mix diced tomatoes, basil, and raw apple cider vinegar together in a saucepan and heat thoroughly.
  5. Place fish on plate and spoon diced tomatoes topping over the fish.
  6. Sprinkle tomatoes with parsley flakes.
