P2 Apple Cookies 

These breakfast cookies are both healthy and delicious. They're freezer-friendly and make an excellent option for breakfast on the go or an afternoon snack. 

Ingredients

  • Pulp from 1 apple
  • 1/8 teaspoon cinnamon
  • Pinch of nutmeg
  • 1/8 teaspoon vanilla powder (unsweetened)
  • Stevia to taste
  • 1 tablespoon lemon juice

Instructions

  1. Mix pulp from 1 apple with stevia and spices and form into cookies. 
  2. Bake the cookies at 350 Degrees for approximately 15-20 minutes or until slightly brown.

Makes 1 serving (1 fruit)
