P2 Bunless Grilled Chicken Sandwich

Ingredients (Serves 1)
- 1 boneless, skinless chicken breast
- 1 teaspoon MCT oil
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- Salt and black pepper to taste
- 2 large lettuce leaves (for base and topping)
- 2 thick slices fresh tomato
- 2–3 slices red onion
Instructions
1. Prepare the Chicken
Pat the chicken breast dry. Drizzle with MCT oil and season both sides with garlic powder, paprika, salt, and pepper.
2. Grill the Chicken
Heat a grill pan or outdoor grill over medium heat. Cook the chicken for about 5–7 minutes per side, or until internal temperature reaches 165°F and juices run clear. Remove and let rest for 3–5 minutes.
3. Assemble the Sandwich
- Place one large lettuce leaf on a plate as your base.
- Add the grilled chicken breast.
- Layer tomato slices and red onion on top.
- Finish with another large lettuce leaf.
4. Serve & Enjoy
Slice in half if desired and enjoy immediately while warm and fresh.
