P2 Chicken Asparagus Bake

Ingredients
- 3.5 oz chicken breast, cubed or shredded
- ½ cup low-sodium chicken broth
- 1 tsp milk
- 1 cup fresh asparagus, trimmed and cut into 1–2 inch pieces
- 2 cloves garlic, minced
- 2 Tbsp chopped onion
- Salt, to taste
- Black pepper, to taste
- Pinch of thyme
- Pinch of parsley
- Pinch of paprika
Instructions
1. Preheat oven to 375°F.
2. Lightly coat a small baking dish with non-stick spray.
3. Spread chicken evenly in the dish.
4. Add asparagus, garlic, and onion on top.
5. Mix broth and milk together and pour evenly over the mixture.
6. Season lightly with salt, pepper, thyme, parsley, and paprika.
7. Cover with foil and bake 20–25 minutes, until chicken reaches 165°F internal temperature.
8. Remove foil during the last 5 minutes if you prefer slight browning.
9. Serve Immediately.
