P2 Chicken Crust Pizza

Ingredients
Crust
- 100g raw chicken breast
- 3 tablespoons water
- 1 clove garlic
- Pinch pink salt
- Black pepper to taste
- ½ teaspoon Italian seasoning
Toppings
- 2 tablespoons tomato paste
- 2 tablespoons cottage cheese
- Handful fresh spinach
- Sprinkle of oregano
Instructions
Preheat oven to 350°F. Line a baking sheet with parchment paper.
Make the crust:
Add chicken breast, water, garlic, salt, pepper, and Italian seasoning to a food processor. Blend until smooth and paste-like.
Form crust:
Spread mixture onto parchment paper. Press very thin (about ¼ inch or thinner) into a round or rectangle shape.
Bake crust:
Bake for 30 minutes until firm and lightly golden.
Add toppings:
Spread 2 tablespoons tomato paste evenly.
Add cottage cheese and fresh spinach.
Bake again:
Return to oven for 10 minutes.
Finish:
Sprinkle with oregano before serving.
