P2 Chicken Stuffed Baked Tomatoes

Ingredients (Serves 2)

  • 2 large firm tomatoes
  • 1 cup cooked shredded chicken breast (7 oz cooked)
  • 1 tablespoon MCT oil
  • 1 teaspoon pink Himalayan salt (or to taste)
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon paprika
  • Fresh parsley for garnish

Instructions

1.     Preheat oven to 375°F.

2.     Slice the tops off the tomatoes and carefully scoop out the pulp and seeds. Lightly sprinkle the inside with a small pinch of pink salt. Place in a small baking dish.

3.     In a bowl, mix shredded chicken, MCT oil, salt, pepper, garlic powder, onion powder, and paprika until well combined.

4.     Spoon the chicken mixture evenly into each hollowed tomato.

5.     Bake for 20–25 minutes, until tomatoes are tender but still holding their shape.

6.     Garnish with fresh parsley and serve warm.
