P2 Chicken Taco Lettuce Wraps

Ingredients (1 Serving)

  • 3.5 oz boneless, skinless chicken breast, diced
  • ⅛ teaspoon pink Himalayan salt
  • ⅛ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon chili powder
  • ¼ teaspoon cumin
  • ⅛ teaspoon smoked paprika
  • 1 tablespoon diced red onion
  • 2 tablespoons diced tomatoes
  • 1 tablespoon chopped fresh cilantro
  • 3–4 large romaine or butter lettuce leaves

Instructions

1.     Season the Chicken
In a small bowl, toss diced chicken with salt, pepper, garlic powder, chili powder, cumin, and smoked paprika until evenly coated.

2.     Cook (Oil-Free Method)
Heat a non-stick skillet over medium heat.
Add the seasoned chicken and cook for 5–7 minutes, stirring occasionally, until fully cooked and lightly browned.
If needed, add 1–2 tablespoons of water to prevent sticking.

3.     Add Fresh Herbs
Remove from heat and stir in chopped cilantro.

4.     Assemble the Wraps
Spoon the cooked chicken evenly into lettuce leaves.
Top with diced red onion and tomatoes.

5.     Serve Immediately
Fold like a taco and enjoy fresh.
