P2 Cucumber Tomato Salad

Ingredients
- 1 medium cucumber, sliced
- 1 medium tomato, chopped
- ¼ small red onion, thinly sliced
- 1 tablespoon MCT Oil
- 1 tablespoon fresh lemon juice
- ¼ teaspoon pink salt (or to taste)
- Pinch black pepper
- Optional: 1 tablespoon chopped fresh parsley or basil
Instructions
1. Slice cucumber and red onion thinly. Chop tomato into bite-size pieces.
2. Add everything to a bowl.
3. Drizzle with fresh lemon juice and MCT oil.
4. Sprinkle with pink salt and black pepper.
5. Toss gently until evenly coated.
6. Let sit 5–10 minutes to allow flavors to blend before serving.
