Ingredients
- 100 g Fish
- 2 cups Crushed Tomatoes
- 2 Tbsp Onion
- 3 Cloves of Garlic, crushed
- 1/4 cup Vegetable Broth
- 1 Bay Leaf
- 1/8 tsp Old Bay Seasoning
- 1/8 tsp Thyme
- 1/8 tsp Basil
- Salt & Pepper to taste
Instructions
In a Mini Stock pot, heat the broth to a boil and add garlic and diced onion, cook until tender.
Add fish portions and cook with onions and garlic until fish is cooked and flakey.
When the fish is at the flake stage, add tomatoes to the pot, along with all spices.
Bring to a boil, then reduce heat. Simmer for at least 5 minutes to get flavors to blend well.
