P2 French Onion Soup

Ingredients (2 Servings)
- 2 medium onions, thinly sliced
- 2 cups organic beef broth
- 2 grissini, crushed
- 3 cloves garlic, minced
- 2 bay leaves
- ½ tsp stevia
- ½ tsp black pepper (plus more to taste)
- 2 fresh thyme sprigs
- Pinch of salt
Instructions
Caramelize the Onions
In a large saucepan over medium heat, add onions, garlic, bay leaves, thyme, salt, pepper, and just enough beef broth to lightly cover the onions.
Cook Until Soft & Golden
Cook for about 25 minutes, stirring occasionally and adding more broth as needed. Continue cooking until onions are very soft and caramelized.
Reduce & Deepen Flavor
Allow most of the liquid to evaporate. Remove bay leaves and thyme sprigs.
Add Grissini
Stir in crushed grissini and reduce heat. Cook for 5–6 minutes to thicken slightly.
Simmer the Soup
Pour in the remaining beef broth. Bring to a gentle simmer and cook for 9–10 minutes.
Season & Serve
Adjust black pepper to taste. Serve immediately or cool and refrigerate for later.
