P2 Garlic Roasted Asparagus & Tomatoes
Ingredients
- 1 bunch fresh asparagus, trimmed
- 1 cup cherry or grape tomatoes
- 1 tablespoon MCT oil
- 2 cloves garlic, minced
- ½ teaspoon sea salt
- ¼ teaspoon black pepper
Instructions
1. Preheat oven to 400°F.
2. Line a baking sheet with parchment paper.
3. Spread asparagus and tomatoes evenly on the pan.
4. Drizzle with MCT oil and sprinkle with garlic, salt, and pepper.
5. Toss gently to coat.
6. Roast for 12–15 minutes, until asparagus is tender and tomatoes begin to burst.
7. Serve warm.
