P2 Hot & Sour Soup

Ingredients

  • 3.5 oz lean ground beef (93–96% lean)
  • 1 ½ cups chopped green cabbage
  • ½ cup diced tomatoes (fresh or no-salt-added canned)
  • 2 green onions, sliced
  • 2 cups low-sodium beef broth
  • 1 tablespoon Bragg Liquid Aminos
  • 1 teaspoon MCT oil
  • 1 teaspoon fresh grated ginger (or ½ tsp ground ginger)
  • 1 clove garlic, minced
  • ½ teaspoon crushed red pepper flakes (adjust to taste)
  • ¼ teaspoon black pepper
  • ¼ teaspoon pink Himalayan salt (optional, to taste)

Instructions

1.     Heat MCT oil in a medium pot over medium heat.

2.     Add lean ground beef and cook until browned, breaking it apart as it cooks (about 5–7 minutes).

3.     Stir in garlic and ginger. Cook for 30 seconds until fragrant.

4.     Add chopped cabbage and diced tomatoes. Stir and cook 2–3 minutes until slightly softened.

5.     Pour in beef broth and Bragg Liquid Aminos.

6.     Add red pepper flakes, black pepper, and salt (if needed).

7.     Simmer for 10–12 minutes to allow flavors to blend.

8.     Taste and adjust seasoning if desired.

9.     Remove from heat and top with fresh green onions.
