P2 Radish Egg Stir Fry

Ingredients

  • 1 large daikon radish, peeled
  • 1 tbsp virgin coconut oil
  • ½ tsp peeled and minced ginger
  • 1 small garlic clove, minced
  • ¼ cup diced scallions
  • Pinch red pepper flakes (optional)
  • 1 large whole egg
  • 3 egg whites
  • Black pepper, to taste

Instructions

 Prep the Daikon

  • Slice the daikon into thin half-moons or julienne strips so it cooks evenly.

 Sauté the Aromatics

  • Heat coconut oil in a large skillet over medium heat.
  • Add ginger and garlic. Sauté about 30 seconds until fragrant.

 Cook the Daikon

  • Add the sliced daikon and red pepper flakes (if using).
  • Cook 6–8 minutes, stirring occasionally, until tender-crisp.
  • Season with black pepper.
  • Stir in scallions during the last minute of cooking.
  • Remove mixture from skillet and set aside.

 Scramble the Eggs

  • In a bowl, whisk together 1 whole egg and 3 egg whites with a pinch of black pepper.
  • Pour into the same skillet (add a small touch of oil if needed).
  • Cook over medium-low heat, gently stirring until softly scrambled and fluffy. Do not overcook.

 Combine & Serve

  • Add the sautéed daikon back into the pan with the scrambled eggs.
  • Gently fold together and cook 30–60 seconds to combine flavors.
  • Serve warm and garnish with extra scallions if desired.
