P2 Radish Egg Stir Fry

Ingredients
- 1 large daikon radish, peeled
- 1 tbsp virgin coconut oil
- ½ tsp peeled and minced ginger
- 1 small garlic clove, minced
- ¼ cup diced scallions
- Pinch red pepper flakes (optional)
- 1 large whole egg
- 3 egg whites
- Black pepper, to taste
Instructions
Prep the Daikon
- Slice the daikon into thin half-moons or julienne strips so it cooks evenly.
Sauté the Aromatics
- Heat coconut oil in a large skillet over medium heat.
- Add ginger and garlic. Sauté about 30 seconds until fragrant.
Cook the Daikon
- Add the sliced daikon and red pepper flakes (if using).
- Cook 6–8 minutes, stirring occasionally, until tender-crisp.
- Season with black pepper.
- Stir in scallions during the last minute of cooking.
- Remove mixture from skillet and set aside.
Scramble the Eggs
- In a bowl, whisk together 1 whole egg and 3 egg whites with a pinch of black pepper.
- Pour into the same skillet (add a small touch of oil if needed).
- Cook over medium-low heat, gently stirring until softly scrambled and fluffy. Do not overcook.
Combine & Serve
- Add the sautéed daikon back into the pan with the scrambled eggs.
- Gently fold together and cook 30–60 seconds to combine flavors.
- Serve warm and garnish with extra scallions if desired.
