P2 Shrimp Scampi

Shrimp scampi is a common favorite and very easy to prepare. Try this healthier version of shrimp scampi without the butter. It’s made with a handful of inexpensive ingredients. Can be served on a fresh bed of spinach or with cabbage. This dish is great served warm or cold.

 

Ingredients

100 grams shrimp

1 lemon, divided

3 Tbsp chicken broth (Swanson)

3 cloves garlic, minced

1 Tbsp basil, dried

1 Tbsp oregano, dried

Pinch of cayenne pepper

Dash of salt

Dash of black pepper

 

Instructions

1. Place shrimp, 1/2 lemon juice, chicken broth, and garlic in a pan. Cook for 5-6 minutes until shrimp is pink and heated through.

2. While cooking: sprinkle shrimp with basil, oregano, cayenne pepper, and salt.

3. Remove shrimp from heat and cool 5 minutes.

4. Serve shrimp with spinach or cabbage. Sprinkle the entire dish with pepper and the remaining 1/2 lemon juice.
