P2 Spinach Stuffed Chicken Breast

Ingredients
Chicken
- (1) 7 oz boneless, skinless chicken breast
- 1 tablespoon MCT oil
- ½ teaspoon paprika
- ½ teaspoon Himalayan pink salt, divided
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
Filling
- 2 tablespoons cottage cheese
- 1½ cups fresh spinach, chopped
- 2 tablespoons onion, chopped
- ½ teaspoon garlic, minced
- ½ teaspoon red pepper flakes
Instructions
1. Preheat oven to 375°F.
2. Prepare the chicken:
Place the chicken breast on a cutting board. Using a sharp knife, carefully cut a pocket into the side of the breast. Drizzle or spray with MCT oil.
3. Season:
In a small bowl, mix paprika, ½ teaspoon salt, garlic powder, and onion powder. Sprinkle evenly over both sides of the chicken.
4. Make the filling:
In another bowl, combine cottage cheese, spinach, chopped onion, minced garlic, red pepper flakes, and remaining salt. Stir until well combined.
5. Stuff the chicken:
Spoon the spinach mixture into the pocket of the chicken breast.
6. Bake:
Place chicken in a lightly sprayed baking dish.
Bake uncovered for 25 minutes, or until the internal temperature reaches 165°F and the chicken is fully cooked.
