P2 Steak & Bok Choy Stir Fry

Ingredients (1 Serving)

  • 3.5 oz lean steak 
  • 2 cups fresh bok choy, chopped
  • 1 tsp MCT oil
  • ¼ tsp pink Himalayan salt (or to taste)
  • 1 clove garlic, minced
  • 1 tsp fresh grated ginger
  • 1 tbsp low-sodium coconut aminos (optional, for flavor)
  • 1 tbsp water or low-sodium broth
  • Cracked black pepper (optional)
  • Red pepper flakes (optional for heat)

Instructions

1.     Prep the Steak
Slice steak thin against the grain for tenderness. Lightly season with a pinch of pink salt and black pepper.

2.     Heat the Pan
Warm a skillet over medium-high heat. Add MCT oil.

3.     Cook the Steak
Add steak strips in a single layer. Sear 1–2 minutes per side until browned. Remove from pan and set aside.

4.     Sauté Aromatics
In the same pan, add garlic and ginger. Sauté 30 seconds until fragrant.

5.     Add Bok Choy
Toss in bok choy. Add water or broth and cook 2–3 minutes until just tender but still crisp.

6.     Combine & Finish
Return steak to pan. Add coconut aminos and remaining pink salt if needed. Stir together for 1 minute.

7.     Serve Immediately
