P3 Cauliflower Breakfast Muffin

Looking for a different way to use cauliflower in a yummy breakfast. These easy to make, low-carb muffins will keep you full all morning. They are good for a delicious snack or savory veggie breakfast.

 

Ingredients

  • 2½ cup finely diced cauliflower (in food processor)
  • 1 Tbsp ground flaxseed
  • 2 eggs, beaten
  • ¼ teaspoon salt
  • ⅛ teaspoon pepper
  • ⅔ cup diced lean ham
  • 2 cups grated sharp cheddar cheese

 

Instructions

Preheat oven to 375 degrees.

In a medium size mixing bowl, combine all ingredients.

Grease a muffin tin with cooking spray, then fill each one about two-thirds full. 

Bake for 30 minutes or until golden brown.
