Ingredients
- 1/2 tsp Salt
- 1 Head Cauliflower (diced in bite-size pieces)
- 1 tsp Salted Butter
- 1 Cup Heavy Cream
- 2 oz Plain Cream Cheese
- 1/2 tsp Dijon Mustard
- 1/2 Mixed Shredded Cheese
- 1/8 tsp Garlic Salt, Onion Granules & Chili Powder (each)
Instructions
- Preheat oven to 375 degrees
- Grease a casserole or baking dish with butter
- Boil or steam cauliflower until slightly tender, about 5 minutes
- Drain the cauliflower and shake off excess water with a fine mesh strainer
- Transfer the cauliflower to the casserole dish and set aside
- Bring cream to a simmer in a saucepan, then whisk in the cream cheese and mustard until combined
- Incorporate 1 cup of the cheese, and seasonings and whisk just until the cheese melts, about 1 to 2 minutes
- Remove from heat, pour over the cauliflower, and stir to combine
- Top with the remaining 1/2 cup cheese and bake until browned, about 18 minutes
- Serve your mac n cheese with baked chicken and buttered vegetables
