P3 Cauliflower Pizza

Ingredients
For the Crust:
- 1 medium head cauliflower (about 3–4 cups riced)
- 1 large egg
- 1 cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- ½ tsp garlic powder
- ½ tsp dried oregano
- ¼ tsp sea salt
For the Toppings:
- ½ cup pizza sauce (no sugar added)
- 1 cup shredded mozzarella
- Your choice of toppings (pepperoni, bell peppers, mushrooms, spinach, grilled chicken, etc.)
Instructions
Preheat oven to 425°F. Line a baking sheet or pizza pan with parchment paper.
Rice the cauliflower:
Cut into florets and pulse in a food processor until it resembles rice.
Cook the cauliflower:
Microwave for 5–6 minutes until soft. Let cool slightly, then place in a clean towel and squeeze out as much moisture as possible. (This step is key for a crispy crust!)
Make the crust mixture:
In a bowl, combine drained cauliflower, egg, mozzarella, Parmesan, garlic powder, oregano, and salt. Mix well.
Form the crust:
Spread mixture onto parchment paper into a 10–12 inch circle about ¼ inch thick.
Bake crust:
Bake 18–22 minutes until golden and firm.
Add toppings:
Spread sauce, sprinkle cheese, and add toppings.
Bake again:
Return to oven for 8–10 minutes until cheese is melted and bubbly.
Cool slightly, slice, and enjoy!
