P3 Chicken Quesadilla

Ingredients (1–2 servings)
- 1 Ezekiel 4:9 Sprouted Grain Tortilla
- 1 small chicken breast, diced
- ¼ bell pepper, thinly sliced
- 2–3 Tbsp onions, sliced
- ¼ cup shredded cheese
- 2–3 Tbsp pico
- 1 tsp olive oil (for cooking)
Seasonings
- ¼ tsp chili powder
- ¼ tsp dried oregano
- ¼ tsp ground cumin
- ¼ tsp garlic powder
- ¼ tsp onion powder
- ¼ tsp salt
- Pinch freshly ground black pepper
Instructions
1. Season the Chicken
In a bowl, combine diced chicken with all seasonings. Mix evenly.
2. Cook the Filling
Heat olive oil in a skillet over medium heat.
Add seasoned chicken and cook 4–5 minutes.
Add bell peppers and onions and sauté until chicken is fully cooked and vegetables are tender (about 3–4 more minutes).
3. Assemble the Quesadilla
Remove filling from skillet.
Place tortilla in the skillet over medium-low heat.
Sprinkle cheese over half the tortilla.
Add chicken and veggie mixture, then fold in half.
4. Cook Until Crispy
Cook 2–3 minutes per side until golden brown and cheese is melted.
5. Serve
Let rest briefly, slice, and top with fresh pico.
