P3 Cinnamon Apple Pancakes

Ingredients
- 2 medium Granny Smith apples, peeled & finely diced
- 2 large eggs
- Pinch of salt
- 1 tbsp heavy cream
- ½ cup almond flour
- 1–2 tbsp xylitol (adjust to taste)
- ½ tsp cinnamon
Instructions
Prep the Apples
Peel and finely dice apples. For softer pancakes, lightly sauté apples in a dry skillet for 3–4 minutes until slightly tender.
Mix the Batter
In a bowl, whisk eggs, heavy cream, salt, xylitol, and cinnamon.
Stir in almond flour until smooth. Fold in diced apples.
Cook the Pancakes
Heat a lightly greased skillet over medium-low heat.
Pour small portions (about 2–3 tbsp each) into the pan and gently spread.
Cook 2–3 minutes per side until golden brown.
Serve
Sprinkle with extra cinnamon.. Serve warm.
