P3 Cinnamon Rolls

Ingredients

Dough:

  • 2 cups almond flour
  • 1 cup mozzarella cheese, shredded
  • 2 tbsp cream cheese
  • 2 large eggs
  • 2 tbsp xylitol
  • 1 tsp baking powder
  • ½ tsp vanilla extract

Cinnamon Filling:

  • 3 tbsp softened butter
  • 3 tbsp xylitol
  • 1½ tsp cinnamon

Cream Cheese Glaze:

  • 3 tbsp cream cheese, softened
  • 1 tbsp butter, softened
  • 2 tbsp powdered xylitol
  • ½ tsp vanilla
  • 1–2 tsp heavy cream (to thin)

Instructions

1.     Preheat oven to 350°F. Line a baking sheet with parchment paper.

2.     In a microwave-safe bowl, melt mozzarella and cream cheese together (about 45–60 seconds). Stir until smooth.

3.     Add almond flour, eggs, xylitol, baking powder, and vanilla. Mix until a dough forms.

4.     Place dough between two sheets of parchment paper and roll into a rectangle (about ¼ inch thick).

5.     Spread softened butter over dough. Sprinkle evenly with xylitol and cinnamon.

6.     Carefully roll dough into a log and slice into 6–8 rolls.

7.     Place on baking sheet and bake 18–22 minutes, until golden brown.

8.     Mix glaze ingredients until smooth and drizzle over warm rolls.

This recipe will make 6–8 cinnamon rolls, depending on how thick you slice them.

·         6 larger rolls → Softer, bakery-style size

·         8 medium rolls → More portion-controlled
