Ingredients
- 1 handful fresh spinach, torn or cut into small pieces
- 8-10 slices bacon, cooked and crumbled
- 1 cup cheese, shredded
- 8 eggs
- 1 green onion finely diced.
- ½ cup diced red bell pepper
- ¼ cup milk
- 1 tbsp Dijon mustard
- sea salt (to taste)
- pepper (to taste)
Instructions
- Preheat oven to 350 degrees.
- In a greased cupcake tin divide spinach, bacon, onions, bell pepper and cheese between the 12 cups.
- In a bowl whisk eggs, water, Dijon, sea salt, and pepper. Ladle egg mixture into each cup. Fill within ¼-inch from top.
- Stir each cup with a fork just to make sure filling is coated with egg mixture.
- Bake for 30-40 minutes or until edges start to pull away.
