P3 Egg Muffins

Are you looking for a way to have a quick and healthy breakfast?  You can make these ahead of time for an on the go breakfast for you and your family.

Ingredients

  • 1 handful fresh spinach, torn or cut into small pieces
  • 8-10 slices bacon, cooked and crumbled
  • 1 cup cheese, shredded
  • 8 eggs
  • 1 green onion finely diced.
  • ½ cup diced red bell pepper
  • ¼ cup milk
  • 1 tbsp Dijon mustard
  • sea salt (to taste)
  • pepper (to taste)

Instructions

  1. Preheat oven to 350 degrees.
  2. In a greased cupcake tin divide spinach, bacon, onions, bell pepper and cheese between the 12 cups.
  3. In a bowl whisk eggs, water, Dijon, sea salt, and pepper. Ladle egg mixture into each cup. Fill within ¼-inch from top.
  4. Stir each cup with a fork just to make sure filling is coated with egg mixture.
  5. Bake for 30-40 minutes or until edges start to pull away.
