This Zucchini Lasagna is comforting, meaty, cheesy, saucy, and low-carb,. You will not miss the noodles. Great for a Sunday dinner with your family.
Ingredients
2 medium zucchinis, sliced into rounds (divided)
1 tomato, quartered then sliced
1 jar sugar free Marinara Pasta Sauce
4 tsp Italian Seasoning blend (sugar-free)
8 ounces browned ground beef
1 cup cheddar cheese, shredded
1 cup Italian 4-cheese blend, shredded.
Instructions
Preheat oven to 350. Spray 9x13 baking dish with cooking spray.
Brown ground meat with spaghetti sauce and 2 tsp of seasoning mix.
Place 1/2 zucchini rounds in bottom of pan. Sprinkle with seasoning.
Top with sliced tomato, then add 1/2 of browned meat mixture.
Top with 1/2 of each cheese. Layer with remaining 1/2 of zucchini rounds.
Sprinkle with more seasoning mix, top with remaining 1/2 of meat mixture, top with remaining cheese.
Bake in preheated oven for 30-40 minutes until vegetables are tender, cheese is melted, and sauce is bubbling over cheese!
Remove from oven and let stand for 10 minutes before serving.
