P3 Peanut Butter Cheesecake Bites

Ingredients
- 8 oz Philadelphia Cream Cheese, softened
- ½ cup natural peanut butter
- 3 tablespoons butter, melted
- ⅓ cup xylitol (adjust to taste)
- 1 teaspoon vanilla extract
- 1 large egg
- 2 tablespoons heavy whipping cream
- 2 tablespoons crushed peanuts
- 1–2 tablespoons Navitas Organics Cacao Nibs
Instructions
1. Preheat oven to 325°F. Line a mini muffin pan with liners or lightly grease.
2. Beat softened cream cheese until smooth and creamy.
3. Add peanut butter and melted butter. Mix until fully incorporated.
4. Blend in xylitol and vanilla extract.
5. Add egg and heavy whipping cream. Mix just until smooth (do not overmix).
6. Fold in crushed peanuts and cacao nibs.
7. Spoon mixture evenly into mini muffin cavities, filling about ¾ full.
8. Bake 12–15 minutes, until centers are just set.
9. Cool completely, then refrigerate at least 1 hour before serving
Optional Finish
- Sprinkle extra crushed peanuts on top
- Drizzle with melted peanut butter
- Add a light dusting of cacao nibs for crunch
