P3 Peanut Butter Cookies

Ingredients
- 1 cup natural creamy peanut butter (no added sugar)
- ½ cup xylitol
- 1 large egg
- ½ tsp baking soda
- 1 tsp vanilla extract
- Pinch of sea salt
Instructions
1. Preheat oven to 350°F. Line a baking sheet with parchment paper.
2. In a bowl, mix peanut butter and xylitol until smooth.
3. Add egg, vanilla, baking soda, and salt. Stir until fully combined.
4. Scoop 1 tablespoon portions onto baking sheet.
5. Flatten gently with a fork to create the classic criss-cross pattern.
6. Bake 8–10 minutes until edges are lightly golden.
7. Let cool completely (they firm up as they cool).
Tips
- For softer cookies: slightly underbake.
- For crunchier cookies: bake 1–2 minutes longer.
- Add sugar-free dark chocolate chips or chopped peanuts for texture.
Store in an airtight container up to 5 days
