Ingredients
1 Tbsp olive oil
1 lb ground Italian sausage
1 cup onion, diced
4 garlic cloves, minced
2 ribs celery, diced
1 lb zucchini, cut into half moons
4 cup Swanson chicken broth (low sodium)
1 14 oz can diced tomatoes
1 tsp dried oregano
1 tsp dried basil
1 bay leaf
Salt and pepper to taste
Instructions
Heat the olive oil in a soup pot over medium-high heat. Add the sausage, celery, pepper, onion, and garlic to the pot. Break up the sausage and cook it for about 8 minutes until browned and cooked through.
Add the chicken broth, diced tomatoes with juice, oregano, basil, bay leaf, salt, and pepper. Bring to a low simmer and cook for 5-10 minutes to build the flavor of the broth.
Add the zucchini to the soup and cook for 5-7 minutes until the zucchini is just tender. Try not to cook it too long or the zucchini will get mushy. If desired, top with Parmesan cheese and fresh herbs.
