P3 Strawberry Cheesecake

Ingredients
- 2 cups almond flour
- 3 tbsp melted unsalted butter
- 2–3 tbsp xylitol
- ½ tsp vanilla extract
- Pinch of salt
Instructions
1. Preheat oven to 350°F.
2. Mix almond flour, xylitol, and salt.
3. Stir in melted butter and vanilla.
4. Press into an 8-inch springform pan.
5. Bake 8–10 minutes until lightly golden. Cool completely.
Cheesecake Filling
Ingredients
- 16 oz cream cheese, softened
- ½ cup powdered xylitol
- 2 large eggs
- ¼ cup heavy cream
- 1 tsp vanilla extract
- 1 tbsp lemon juice
Instructions
1. Beat cream cheese until smooth.
2. Mix in xylitol.
3. Add eggs one at a time.
4. Blend in heavy cream, vanilla, and lemon juice.
5. Pour over crust.
6. Bake at 325°F for 45–55 minutes (center slightly jiggly).
7. Cool gradually, then refrigerate at least 4 hours.
Homemade Strawberry Glaze
Ingredients
- 1½ cups fresh strawberries, chopped
- 2–3 tbsp xylitol
- 1 tsp lemon juice
Instructions
1. Heat strawberries, xylitol, and lemon juice over medium heat.
2. Simmer until berries break down and mixture thickens naturally.
3. Mash slightly and allow to cool completely.
4. Spread over chilled cheesecake.
To Finish
Spread cooled glaze over cheesecake. Refrigerate 30 minutes to set. Slice and serve chilled.
