Spinach Stuffed Chicken Breast

Spinach Stuffed Chicken Breast is a delicious and healthy P3 meal that is perfect for a quick weeknight dinner or a special occasion. The recipe involves butterflying a chicken breast and filling it with a mixture of spinach, cheese, garlic, and spices.

Ingredients

  • (1) 7 oz chicken breast boneless, skinless
  • 1 tablespoon Olive oil (or Olive oil spray)
  • 1/2 teaspoon paprika
  • 1/2 teaspoon Himalayan Pink Salt, divided
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder

Filling

  • 2 Tbsp cream cheese
  • 2 cups chopped fresh spinach
  • 2 Tbsp. onion, chopped
  • 1/2 teaspoon garlic, minced
  • 1/2 teaspoon red pepper flakes

Directions

  1. Preheat oven to 375 degrees.
  2. Place the chicken breast on a cutting board then use a sharp knife to cut a pocket of the chicken breast. Drizzle/spray on the Olive oil
  3. Add the paprika, salt, garlic powder, and onion powder to a small bowl and stir to combine. Sprinkle evenly over both sides of the chicken.
  4. In small bowl combine cream cheese, spinach, garlic, red pepper and remaining 1/2 teaspoon of salt and stir well to combine.
  5. Spoon the spinach mixture into the chicken breast.
  6. Place the chicken breast in a baking dish. (Can spray the dish with Olive oil for easy clean up)
  7. Bake, uncovered, for 25 minutes or until chicken is cooked through.
  8. Enjoy with a small salad.
