P3 Spinach Bacon-Wrapped Stuffed Chicken Breast

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 6–8 slices bacon
  • 4 oz cream cheese, softened
  • ¼ cup grated parmesan cheese
  • ½ cup shredded mozzarella cheese
  • 1 cup baby spinach, chopped
  • 2 cloves garlic, pressed
  • 1 teaspoon salt (divided)
  • ½ teaspoon garlic powder
  • ½ teaspoon Italian seasoning
  • ½ teaspoon paprika
  • ¼ teaspoon black pepper

Instructions

Prep the Chicken

  • Preheat oven to 375°F.
  • Slice a deep pocket into the side of each chicken breast (do not cut all the way through).
  • Drizzle with olive oil.
  • Season both sides with salt, garlic powder, paprika, black pepper, and Italian seasoning.

Make the Filling

In a bowl, mix together:

  • Cream cheese
  • Parmesan cheese
  • Mozzarella
  • Pressed garlic
  • Chopped spinach
  • Small pinch of salt

Stir until smooth and well combined.

Stuff & Wrap

  • Divide filling evenly between the two chicken breasts.
  • Secure with toothpicks if needed.
  • Wrap each stuffed chicken breast tightly with 3–4 slices of bacon, slightly overlapping.

Cook

Option 1 – Bake Only:

  • Place in a lightly greased baking dish.
  • Bake uncovered for 30–40 minutes, until internal temperature reaches 165°F.

Option 2 – Sear + Bake (Best Flavor):

  • Sear wrapped chicken in a skillet over medium heat for 2–3 minutes per side to start crisping the bacon.
  • Transfer to oven and bake 20–25 minutes until fully cooked.

Optional: Broil 2–3 minutes at the end for extra crispy bacon.
