Spinach Stuffed Chicken Breast is a delicious and healthy P3 meal that is perfect for a quick weeknight dinner or a special occasion. The recipe involves butterflying a chicken breast and filling it with a mixture of spinach, cheese, garlic, and spices.
Ingredients
- (1) 7 oz chicken breast boneless, skinless
- 1 tablespoon Olive oil (or Olive oil spray)
- 1/2 teaspoon paprika
- 1/2 teaspoon Himalayan Pink Salt, divided
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
Filling
- 2 Tbsp cream cheese
- 2 cups chopped fresh spinach
- 2 Tbsp. onion, chopped
- 1/2 teaspoon garlic, minced
- 1/2 teaspoon red pepper flakes
Directions
- Preheat oven to 375 degrees.
- Place the chicken breast on a cutting board then use a sharp knife to cut a pocket of the chicken breast. Drizzle/spray on the Olive oil
- Add the paprika, salt, garlic powder, and onion powder to a small bowl and stir to combine. Sprinkle evenly over both sides of the chicken.
- In small bowl combine cream cheese, spinach, garlic, red pepper and remaining 1/2 teaspoon of salt and stir well to combine.
- Spoon the spinach mixture into the chicken breast.
- Place the chicken breast in a baking dish. (Can spray the dish with Olive oil for easy clean up)
- Bake, uncovered, for 25 minutes or until chicken is cooked through.
- Enjoy with a small salad.
