P3 Spinach Bacon-Wrapped Stuffed Chicken Breast

Ingredients
- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 6–8 slices bacon
- 4 oz cream cheese, softened
- ¼ cup grated parmesan cheese
- ½ cup shredded mozzarella cheese
- 1 cup baby spinach, chopped
- 2 cloves garlic, pressed
- 1 teaspoon salt (divided)
- ½ teaspoon garlic powder
- ½ teaspoon Italian seasoning
- ½ teaspoon paprika
- ¼ teaspoon black pepper
Instructions
Prep the Chicken
- Preheat oven to 375°F.
- Slice a deep pocket into the side of each chicken breast (do not cut all the way through).
- Drizzle with olive oil.
- Season both sides with salt, garlic powder, paprika, black pepper, and Italian seasoning.
Make the Filling
In a bowl, mix together:
- Cream cheese
- Parmesan cheese
- Mozzarella
- Pressed garlic
- Chopped spinach
- Small pinch of salt
Stir until smooth and well combined.
Stuff & Wrap
- Divide filling evenly between the two chicken breasts.
- Secure with toothpicks if needed.
- Wrap each stuffed chicken breast tightly with 3–4 slices of bacon, slightly overlapping.
Cook
Option 1 – Bake Only:
- Place in a lightly greased baking dish.
- Bake uncovered for 30–40 minutes, until internal temperature reaches 165°F.
Option 2 – Sear + Bake (Best Flavor):
- Sear wrapped chicken in a skillet over medium heat for 2–3 minutes per side to start crisping the bacon.
- Transfer to oven and bake 20–25 minutes until fully cooked.
Optional: Broil 2–3 minutes at the end for extra crispy bacon.
